PEANUT BUTTER COOKIES

Makes 5 dozen cookies

INGREDIENTS:
1 cup unstalted butter
1 cup peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs
2 1/2 cups all-purpose flour     
1 1/2 tsp. baking soda 
1 tsp. baking powder 
1/2 tsp salt
Add in mini-chocolate chips (optional)

DIRECTIONS:
Preheat oven to 375°.

Beat butter, peanut butter, white sugar, and brown sugar with an electric mixer in a large
bowl until smooth. Beat in eggs.

Combine flour, baking soda, baking powder and salt into a separate bowl and mix together.
Stir into butter mixture until dough is just combined.

Chill dough for 1 hour.

Roll dough into 1 inch balls and place them 2 inches apart on an ungreased baking sheet.
Flatten each ball with a fork, making a crisscross pattern.

Bake in preheated oven until edges are golden brown, about 10 minutes.

Cool briefly on baking sheets before removing to cool completely. Once completely cool,
place in an air-tight disposable container and label.
